Tropical Oatmeal Bowl Recipe:

  • Bring 1 cup rolled oats and 2 cups plant milk to a boil, then cover and simmer for five minutes.
  • Mix 2 tsp pitaya (dragon fruit) powder with 1 Tbsp plant milk to make the dye.
  • Cook 2 cups frozen pineapple in a sauce pan with 2 tbsp maple syrup. After 2-3 minutes, the pineapple will begin to release liquid.
  • Pour the liquid into the oats to sweeten and cook the pineapples for 2-3 more minutes until golden brown.
    Stir the pink dye into the oats, top with caramelized banana, shredded coconut, a drizzle of cashew yogurt, and black sesame seeds.
